Chicken & Cheese Sauce

This recipe comes from my mother-in-law, although I admit I changed a few things. My daughter doesn’t like it because she doesn’t like curry, but the rest of the family can’t get enough of it. My son, Nathan, especially loves it. This is Nathan being goofy. Don’t worry, his eyes don’t usually go in different directions.

Note: If you’re like my daughter, just leave the curry out.

boneless, skinless chicken breasts
2 cans cream of chicken soup (I use healthy request)
1/2 cup mayo (I use light)
1 tbsp curry
2 tbsp lemon juice
1/2 cup water
16 oz cooked broccoli
2 cups shredded cheddar
1/2 cup dried bread crumbs

rice

Boil chicken for 30 minutes.  Then cut into bite-size pieces.  Mix chicken soup, mayo, curry, lemon juice, & water to make sauce.  In a baking dish, place cooked broccoli, then chicken, then sauce.  Generously sprinkle cheddar cheese and dried bread crumbs on top.  Bake 30 minutes at 350 degrees.  Serve over rice.

    I’m surprised you’re so generous with all these recipes! yumm- & it’s dinner time so I need to start cooking..
    do you tell him his eyes may get stuck like that one of these days? haha -he’s in the tub isn’t he- the girls love to wear their goggles in the tub-

    This is my favorite thing you’ve ever made. Seriously. It’s that good. You should make it once a week. Then Taylor would get mad at you more than she already does…won’t she? Okay, nevermind.
