Crab Quiche

I’m going to have lunch with one of my BFFs in Gainesville tomorrow. We share our name and anniversary date, among other things. Lori x 2 in 2007:

I got this recipe from her. It’s delightful!

-Fresh sliced mushrooms (however many you’d like)
-1 small onion, minced
-1 cup crab meat (imitation, flake style)
-1 cup half & half cream
-3 eggs
-1/2 cup mayonnaise
-1/2 cup shredded Swiss cheese (a handful of cheddar cheese mixed with it is good, too!)
-Salt and pepper to taste
-9-inch pie crust or deep dish or flaky style pie crust

Sauté onions and mushrooms. Arrange mushrooms, onions, and crab on bottom of partially baked pie shell. Combine cream, eggs, mayo, salt, and pepper in bowl. Beat until smooth. Stir in cheese. Pour into pastry shell.

Bake at 375 for 25 minutes or until golden.
