Pumpkin Roll

As promised, I have swiped my mama’s recipe for pumpkin roll. I’m not claiming this will be easy to make, but the effort will be worth the result! This is what I call heaven on a plate:

Cake:
1 cup sugar
3/4 cup flour
1/2 teaspoon pumpkin spice
1/2 teaspoon cinnamon
1/2 teaspoon baking soda

3 eggs
2/3 cup canned pumpkin

Mix dry ingredients well, then add eggs and pumpkin.

15 x 9 cookie sheet:
Spray Pam in bottom of pan (spray well!). Put waxed paper on greased bottom. Spray waxed paper with Pam (spray well!).

Pour mixture on greased waxed paper. Shake pan to make it spread evenly.

Bake at 375 degrees for 15 minutes.

Sprinkle powdered sugar on towel, then flip cake onto it. Peel the wax paper off. Roll in towel until cool.

Filling:
1 cup powdered sugar
2 tablespoons butter, softened
1 teaspoon vanilla
8 ounces cream cheese, softened

Blend all well.

Unroll cake and spread with filling. Cake should be slightly warm so it won’t crack, but cool enough that filling won’t slide. Consider unrolling and letting it cool a little more before spreading filling.

Re-roll cake. Rub powered sugar over entire roll.

Wrap in waxed paper, then foil. Freeze. Slice after frozen. Serve defrosted.

    That’s funny. I was JUST watching it on line.
    All I am trying to say, is that your blog is my favorite blog. You have no idea what happens in me when I see a number on my blog reader that says, “you have blogs.”
    My heart races in anticipation. I say a short prayer, “God, please let this be a new posting from SeriouslyBecause.”
    Then I see it. The number 1 beside SeriouslyBecause. MY heart races. Just before I click it, a little thought says, “What if it is a recipe?”
    I say to myself, “NO way. She just did a recipe two days ago.”
    So, speaking faith and not doubting, “It is not a recipe, it is not a recipe. It is something funny. It is something about Shoreline. Better yet, it is something about me.”
    Then it happens. I click it. I see it. The feelings come rushing over me. Similar to the feeling I had when my collie, Leo, who was hit by a car, hobbled his way home leaving a blood trail for a block. I saw him coming into the yard and ran outside. I held him in my arms as he looked at me with his glassy eyes that I swear were crying. He made it all the way home to tell me he loved me before he walked into eternity. I sat there for what seemed like hours as my tears mingled with his blood trying to grasp the situation as a 9 year old boy.
    That is how I feel when I see a recipe on SerioulsyBecause .

    Wow. As the pastor of a growing church, with multiple services exploding and micro-sites a’brewin’, erickyp seems to have a lot of time on his hands to expound upon that which is so temporal in light of the eternal calling of his profession. One would think he would devote these precious minutes, which he shall never have again, to sharing the joy of a life-saving gospel rather than assuming that there is anyone out here who wishes to hear the grumbling of this Destinite. It would appear that, with time free to devote to such trivial murmuring and complaining, that erickyp’s Plate has room for more tasks. It certainly is not filled with food, as evidenced by his repeated disdain for recipes.
