Roasted Vegetables with Pasta

These are the vegetables I like to use. You may omit or add as you like; the directions stay the same.

1/2 medium onion (yellow, sweet, or red)
8 Roma tomatoes
2 zucchini
2 yellow squash
8 oz mushrooms
4 garlic cloves, minced
olive oil
salt
pepper
fresh Parmesan, shredded
pasta (I prefer angel hair or ziti)

Put the oven on broil. Cut all vegetables into bite-size chunks. Toss with olive oil, garlic, salt, and pepper (all to taste). Place vegetables on a greased cookie sheet. Broil for 15 minutes or until vegetables are browned to your liking. Serve over pasta with fresh Parmesan. If dry, add a bit more olive oil.

    The BEST recipe we’ve tried in over 6 mos unanimously! Kids went back for seconds last night and EVERYONE requested the left overs for lunch today! I told them the recipe was compliments of you and they told me to tell you “Thanks!” :D

    Forgot to mention, the only additions I made were in adding oregano, basil and a lil garlic salt (in addition to the fresh garlic) to the veggies along with the oil and then again on top of them after they were arranged on the sheet. We love super seasoned and spicy foods, lol.
